Easy Plant Based Dinner

 

Our family is mostly plant based. As I am not the most organized person in the world, I rely on easy plant based dinners for most nights. We have a few recipes that we make nearly every week, and switch it up every now and again.

For this easy plant based dinner, I will be shopping at the tried and true Trader Joes. I am obsessed with Trader Joes. From the friendly employees, to the lions they hide in my store for the kids to find, and most importantly their commitment to good whole foods. I can trust the groceries I buy there.


This recipe requires just four ingredients: tofu, stir fry blend, soyaki sauce, and jasmine rice. That’s what makes this an easy plant based dinner.


Tofu: If you are not used to eating a plant based diet, you may not be used to tofu. Tofu was a tricky thing to add to my diet. I think the first five times I ate it, I hated it. But it grew on me, and is not a staple in my life. Firm tofu nearly always. It is very rare I buy tofu that is not firm, and for this recipe we will definitely be using firm tofu. So many people I know press the tofu to remove excess water. I have never done this for my tofu recipes and they are still very much bomb.com. Lastly, you probably want your tofu browned on each side. Make sure you keep it in the pan long enough to brown a bit, this gives it a yummy taste and texture.

Stir Fry Blend: There are a million stir fry blends in the world and I have tried quite a few of them. We love love love the Asian Stir Fry Vegetables in the produce section of Trader Joes. Feel free to use any stir fry blend you desire or chop up vegetables yourself if you feel so inclined. As for me and my house, we will use this easy veggie blend.

Soyaki Sauce: Soyaki Sauce is just yummier teriyaki sauce. It is flavored perfectly and as sesame seeds. Who doesn’t love sesame seeds? Also, feel free to substitute any teriyaki sauce of your choice.

Rice: We use Jasmin Rice from Trader Joes. Again friends, we are in the business of keeping it simple. If you have a rice cooker or instapot, let that do the work for you. We don’t have a rice cooker and hardly every use our instapot, so we make this rice and it literally takes four seconds of energy. Keep it simple.

Let’s get to it. Here is the recipe to the meal we make every single week because it is that easy. This meal takes 20 minutes to make and most of the time, it is making itself, so yay.


Tofu Stir Fry

1 Block of Firm Organic Tofu

1 Container of Asian Blend Stir Fry Vegetables (Trader Joes)

⅓ cup of Soyaki Sauce (Trader Joes)

Serving Size: 400 grams.

Serve over however much white rice you’d like. Enjoy.
